1 tbs ground cumin

1 tbs ground coriander

1 tsp chilli flakes (optional)

1 tbs olive oil

2 cloves garlic, minced

1 brown onion, diced

1 can diced tomatoes (400g)

1 pinch sugar

salt and pepper, to taste



  1. Heat a medium saucepan, add oil. Place cumin, coriander, chilli flakes (if using) and diced onion in pan, cooking until softened.
  2. Add tomatoes and sugar. Cook for 10 minutes over medium heat, with the lid off, stirring occasionally.
  3. Season with salt and pepper.
  4. Allow to cool before spooning carefully into jars.

TIP: The chilli makes this dish a medium heat, so if you have kids, it might be best to leave the chilli out.
